Es Niu is a traditional dish of Palafrugell cuisine that takes time. It needs about 5 hours of patient elaboration, and is made with ingredients such as cod, egg, potato, cuttlefish and various types of meat.
Originally, it was a typical Quaresma dish that did not carry meat and was very popular among fishermen. Es Niu became popular, and over time it has evolved with the inclusion of new ingredients and reinterpretations.
